Founded in 2025 by chef James Brun, a Norfolk local, who after working in kitchens and on farms from England to Japan decided to return home to use his knowledge to celebrate what the county has to offer.

Our proximity to the North Norfolk coast provides us with a variety of seafood and wild sea herbs. Our woodlands offer many different breeds of venison, as well as wood pigeon, fungi and other wild fruit and plants. We also work closely with local market gardens who provide organic vegetables whilst using local dairy, egg and rare breed farms to find the most sustainable and ethical ingredients.

Guests can expect a carefully curated set menu based on what is available around them during the season. We believe that by cooking these ingredients in the most primitive way, over fire, we celebrate what mother nature has to offer in its purest form.
